Having been without my beloved nattō for more than a week, I found myself drawn to Arakawa Restaurant when I was in the area for another event.
I asked for a nattō surprise, which basically signals that I’d like something different, allowing the chef to choose the direction he goes in. Fortunately, he chose a temaki (hand roll), a favourite of mine as it allows for larger ingredients to be added without squashing them like in a traditional roll. Tonight’s temaki contained salmon, takuan (pickled daikon), tamagoyaki (sweet egg omelette) and of course, nattō.
Following that, our chef prepared a special extra treat, a delicious looking gunkanmaki, topped with tuna and sesame seeds.
