Sometimes fresh nattō isn’t on the menu, but a candied version takes its place instead. That was just the case at JFX in Southport today where I found a tasty little snack in the form of umaibō; a crispy, cylindrical corn stick, similar in appearance to makizushi. Different flavours are powdered onto the stick, and in this case I chose nattō. What I can tell you is that it really reminded me of nattō, both in smell and taste, but without the stickiness you fall short of the full experience.
